Ingredients

extra-firm tofu cut into small cubes
4 (14 oz) package
coconut oil
6 tbsp
ginger minced
4 inch piece
garlic minced
4 clove
yellow onion chopped
4 medium
cayenne pepper
1 1/2 to 1/2 tsp
water
1 1/3 cup
garam masala
2 tbsp
ground coriander
2 tbsp
ground turmeric
1 tsp
salt
4 tsp
black pepper
1/2 tsp
diced tomatoes with juice
4 (14 oz) can
vegetable broth
2 cup
frozen baby peas thawed slightly
8 cups
cilantro fresh chopped
to taste
rice
for serving

Method

  1. 01Blend onion, ginger, garlic, cayenne, and water until smooth paste. Set aside.
  2. 02Heat coconut oil in a large sauté pan. Add tofu cubes in a single layer and stir-fry until golden, about 3 minutes. Transfer to a plate.
  3. 03Add blended paste to the same pan and cook, stirring constantly, until light brown, about 5 to 6 minutes.
  4. 04Add garam masala, coriander, turmeric, salt, pepper, and tomatoes. Stir and cook a few minutes longer.
  5. 05Add vegetable broth and peas, mix well, and bring to a boil.
  6. 06Cover, lower heat, and simmer gently for 10 minutes.10 min
  7. 07Uncover and add tofu cubes. Simmer 10 minutes until tofu and peas are heated through.10 min
  8. 08Top with cilantro and serve with rice.
