vegetable broth

frozen baby peasthawed slightly
4 cups
cilantrofresh chopped
to taste

  1. 01Blend onion, ginger, garlic, cayenne, and water until smooth paste. Set aside.
  2. 02Heat coconut oil in a large sauté pan. Add tofu cubes in a single layer and stir-fry until golden, about 3 minutes. Transfer to a plate.
  3. 03Add blended paste to the same pan and cook, stirring constantly, until light brown, about 5 to 6 minutes.
  4. 04Add garam masala, coriander, turmeric, salt, pepper, and tomatoes. Stir and cook a few minutes longer.
  5. 05Add vegetable broth and peas, mix well, and bring to a boil.
  6. 06Cover, lower heat, and simmer gently for 10 minutes.10 min
