  1. 01Preheat grill to medium-high.
  2. 02Combine ground turkey, shallot, ginger, garlic, lemongrass, cilantro, lime zest, scallion, jalapeño, salt, sugar, white pepper, and 2 tsp olive oil in a bowl. Break apart turkey with a fork, then knead with a wet hand until mixed.
  3. 03With damp hands, shape into 4 burgers, compressing edges. Refrigerate on a plate until ready to grill.
  4. 04Toss carrot, purple cabbage, scallion, lime juice, 1 tbsp olive oil, salt, and pepper in a bowl.
  5. 05Whisk mayonnaise and sriracha in a small bowl.
