Ingredients
- wild salmon filets with skin
- 2 (6 oz) filets1 lb
- kosher salt
- 3/4 tsp
- buttersoftened
- 3 tbsp3 tbsp
- harissa powder
- 3/4 tbsp
- sriracha
- 1/2 tsp
- garlicminced
- 2 cloves
- shallotthinly sliced
- 1 shallot
- limesliced, half reserved for juice
- 1 lime

Method
- 01Preheat grill to 400°F with lid closed.
- 02Pat salmon dry and sprinkle flesh with 1/4 tsp salt per filet.
- 03Mix softened butter with harissa, sriracha, minced garlic, and 1/2 tsp salt.
- 04Lay large foil sheet on counter. Arrange lime slices in middle, spread butter mixture on salmon, place filets skin-side down on limes, scatter shallot over top.
- 05Fold foil sides up and over salmon, sealing tightly into a packet.
- 06Place packet on grill and cook 6-7 minutes with lid closed until thickest part reaches 125-135°F.7 min
- 07Remove from grill, open foil, transfer salmon and shallots to plate, squeeze reserved lime juice over top.
