Mashed Sweet Potatoes

Ingredients
- unsalted butter cut into 4 pieces

- heavy cream
- 6 tbsp
- sweet potatoes peeled and cut into 1-inch cubes
- 6 lb
- maple syrup
- 3 tsp
- kosher salt
- 2 1/4 tsp
- black pepper
- 3/4 tsp
- pecans chopped
- 3 tbsp
- fresh herbs thyme or parsley, chopped
- 3 tsp
Method
- 01Place butter, heavy cream, sweet potatoes, maple syrup, salt, and pepper in a medium saucepan with a tight-fitting lid. Stir to combine.
- 02Cook over low heat, stirring occasionally, until potatoes are soft and almost falling apart, 15 to 20 minutes.18 min
- 03Mash potatoes with a potato masher or fork to your desired texture.
- 04Taste and adjust salt and pepper as needed.
- 05Transfer to a serving bowl and garnish with pecans and fresh herbs.
