Cream of Mushroom Soup

Ingredients
- onion diced

- garlic minced
- 6 cloves
- mushrooms sliced
- 2 lb
- vegetable broth
- 12 cups
- dry sherry
- 1 cup
- dried oregano
- 1 tsp
- dried thyme
- 1 tsp
- nutritional yeast
- 4 tbsp
- raw cashews soaked in hot water 10 minutes
- 2 cup
- salt to taste

Method
- 01Sauté onion and garlic in a bit of vegetable broth until onion is translucent.5 min
- 02Add mushrooms and sauté until reduced in size.5 min
- 03Add remaining vegetable broth, oregano, thyme, and sherry. Simmer 20 minutes.20 min
- 04Remove 2 cups of hot soup. Blend removed soup with cashews and nutritional yeast until completely smooth.
- 05Return blended mixture to pot. Season with salt and pepper.
- 06Heat 5 minutes until slightly thickened.5 min
