Ingredients

onion diced
1 onion
garlic minced
1 cloves
mushrooms sliced
1/3 lb
vegetable broth
2 cups
dry sherry
0.17 cup
dried oregano
0.17 tsp
dried thyme
0.17 tsp
nutritional yeast
2/3 tbsp
raw cashews soaked in hot water 10 minutes
1/3 cup
salt to taste
to taste
pepper to taste
to taste

Method

  1. 01Sauté onion and garlic in a bit of vegetable broth until onion is translucent.5 min
  2. 02Add mushrooms and sauté until reduced in size.5 min
  3. 03Add remaining vegetable broth, oregano, thyme, and sherry. Simmer 20 minutes.20 min
  4. 04Remove 2 cups of hot soup. Blend removed soup with cashews and nutritional yeast until completely smooth.
  5. 05Return blended mixture to pot. Season with salt and pepper.
  6. 06Heat 5 minutes until slightly thickened.5 min
