Mushroom Bacon Spaghetti

- kosher salt

- baconthick-cut, cut crosswise into 1/2-inch strips

- mushroomsassorted, sliced 1/2-inch thick

- scallionswhite and green parts separated, sliced thin

- soy sauce
- 3 tbsp
- instant dashi powder

Method
- 01Bring 2 quarts water to boil in large pot. Add spaghetti and 1/2 tbsp salt, stir occasionally, cook until al dente.
- 02Reserve 1 cup cooking water, drain pasta, return to pot.
- 03Cook bacon in 12-inch skillet over medium heat until golden and crispy, 6 to 8 minutes. Transfer to paper towel-lined plate.
- 04Add mushrooms to fat in skillet, cook over medium-high heat until softened and edges are golden, about 5 minutes.5 min
- 05Add scallion whites and garlic, cook until fragrant, about 30 seconds.
- 06Stir in 1/2 cup reserved cooking water, butter, soy sauce, and dashi powder.
- 07Transfer to pot with pasta along with bacon and toss to combine. Adjust consistency with additional cooking water as needed.
- 08Sprinkle with scallion greens and serve.
