Southwest Cauliflower Rice

Ingredients
- garlic minced
- 6 cloves
- olive oil
- 3 tbsp
- cauliflower rice
- 12 cups
- diced tomatoes with green chiles
- 3 (10 oz) can
- chili powder
- 1 1/2 tbsp
- smoked paprika
- 1 1/2 tsp
- ground cumin
- 1 1/2 tsp
- dried oregano
- 3/4 tsp
- salt
- 3/4 tsp
- black pepper freshly cracked
- 3/8 tsp
- green onions sliced
- 6 green onions
Method
- 01Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
- 02Add cauliflower rice and sauté for 5 minutes until softened.5 min
- 03Add diced tomatoes with green chiles and all juices, chili powder, smoked paprika, cumin, oregano, salt, and pepper. Stir and cook for 5 minutes until most liquid evaporates.
- 04Taste and adjust salt or spices. Top with green onions and serve.
