Lemon Pesto Rice

Ingredients

olive oil extra-virgin
1 1/2 tbsp
butter
1 1/2 tbsp
rice converted
1 1/2 cup
salt
3/4 tsp
lemon juice fresh-squeezed
4 1/2 tbsp
chicken broth
3 cups
basil pesto
6 tbsp

Method

  1. 01Heat chicken broth in microwave or small pan until just starting to boil.
  2. 02In a pan with tight-fitting lid, heat olive oil and butter over medium heat until butter melts.
  3. 03Add rice and cook 2-3 minutes, stirring occasionally, until lightly browned.
  4. 04Add salt and lemon juice, cook 1 minute.
  5. 05Add hot broth and bring to a very low boil.
  6. 06Lower heat to lowest setting that maintains a bare simmer, cover, and cook 22 minutes without lifting lid.22 min
  7. 07Remove lid and check that liquid is mostly absorbed and rice is tender. Cook a few minutes longer covered if needed.
  8. 08Fluff rice with fork and stir in pesto.
  9. 09Cover and let stand 5 minutes.5 min
