Spanish Rice and Beans

Ingredients

avocado oil
1 1/3 tbsp
onion chopped
1/3 medium
garlic minced
1 1/3 tsp
red bell pepper chopped
2/3 medium
long grain white rice
1 1/3 cup
cumin
2/3 tsp
chili powder
1 1/3 tsp
smoked paprika
1 1/3 tsp
cayenne
1/3 tsp
salsa
1/3 cup
tomato sauce
1/3 cup
vegetable broth
1 2/3 cup
red beans cooked
1 2/3 cup
salt
to taste
black pepper
to taste
fresh cilantro
optional

Method

  1. 01Heat oil in a sauté pan over medium heat.
  2. 02Add onion and garlic, cook 1-2 minutes.
  3. 03Add bell pepper and a dash of salt, cook 2-3 minutes.
  4. 04Add rice and toast 2-3 minutes until slightly browned.
  5. 05Mix in cumin, chili powder, paprika, cayenne, salt, and pepper.
  6. 06Pour in salsa and tomato sauce, mix and cook 3-5 minutes.5 min
  7. 07Add broth, mix, and bring to a simmer.
  8. 08Cover and simmer 13-15 minutes, stirring occasionally.15 min
  9. 09Add salt and pepper to taste.
  10. 10Add beans and cook until warm, about 3-5 minutes.
  11. 11Stir in cilantro if using and remove from heat.
