Sticky Tofu

Ingredients
- firm or extra-firm tofu pressed, cut into cubes

- avocado oil
- 4 tbsp
- cornstarch
- 4 tbsp
- ginger grated
- 2 tbsp
- garlic minced
- 2 clove
- coconut sugar
- 6 tbsp
- apple cider vinegar
- 2 tbsp
- ketchup
- 2 tbsp
- tamari
- 4 tbsp
- cornstarch
- 2 tbsp
- water cold
- 2 tbsp
- green onions sliced
- to taste
- sesame seeds
- to taste
Method
- 01Toss tofu cubes with avocado oil and 2 tbsp cornstarch.
- 02Heat avocado oil in a large pan over medium-high heat. Add tofu and cook 2-3 minutes per side until golden brown.
- 03While tofu cooks, whisk ginger, garlic, coconut sugar, apple cider vinegar, ketchup, and tamari in a bowl.
- 04Whisk 1 tbsp cornstarch with 1 tbsp cold water until smooth, then stir into sauce.
- 05Lower heat to medium-low. Pour sauce into pan with tofu and stir until coated.
- 06Simmer until sauce thickens and bubbles lightly, about 2-3 minutes.
- 07Serve topped with green onions and sesame seeds.
