Lemon Orzo

Ingredients
- unsalted butter
- 3 tbsp
- orzo pasta
- 4 1/2 cup
- vegetable broth
- 9 cup
- garlic grated
- 6 clove
- kosher salt
- 1 1/2 tsp
- black pepper freshly ground

- frozen peas
- 1 1/2 cup
- lemon juice fresh
- 6 tbsp
- lemon zest
- 3
- Parmesan cheese grated
- 1 1/2 cup
- fresh parsley chopped
- 3/4 cup
Method
- 01Melt butter in a large saucepan over medium heat. Add orzo and cook, stirring occasionally, for 2 minutes to toast.
- 02Add 3 cups broth, garlic, salt, and pepper. Bring to a boil, reduce heat to medium-low, and cook, stirring occasionally, for 10 minutes until broth is absorbed.
- 03Add peas and cook for 2 minutes until heated through.
- 04Remove from heat and stir in lemon juice, lemon zest, Parmesan, and half the parsley until cheese melts.
- 05Season to taste with more salt and pepper. Stir in additional broth as needed to keep orzo lightly creamy.
- 06Serve topped with remaining parsley and more Parmesan.
