Lemon Orzo

Ingredients

unsalted butter
2 tbsp
orzo pasta
3 cup
vegetable broth
6 cup
garlic grated
4 clove
kosher salt
1 tsp
black pepper freshly ground
to taste
frozen peas
1 cup
lemon juice fresh
4 tbsp
lemon zest
2
Parmesan cheese grated
1 cup
fresh parsley chopped
1/2 cup

Method

  1. 01Melt butter in a large saucepan over medium heat. Add orzo and cook, stirring occasionally, for 2 minutes to toast.
  2. 02Add 3 cups broth, garlic, salt, and pepper. Bring to a boil, reduce heat to medium-low, and cook, stirring occasionally, for 10 minutes until broth is absorbed.
  3. 03Add peas and cook for 2 minutes until heated through.
  4. 04Remove from heat and stir in lemon juice, lemon zest, Parmesan, and half the parsley until cheese melts.
  5. 05Season to taste with more salt and pepper. Stir in additional broth as needed to keep orzo lightly creamy.
  6. 06Serve topped with remaining parsley and more Parmesan.
