Turkey and Black Bean Enchiladas

Ingredients

ground turkey extra lean
1 lb
black beans drained
1 (15.5 oz) can
green chiles chopped
1 (4.5 oz) can
diced tomatoes
1 (14.5 oz) can
garlic
2 cloves
onion chopped
1/4 cup
cilantro chopped
1/4 cup
cumin
1 1/2 tsp
chili powder
1/8 tsp
salt
to taste
whole wheat flour tortillas 6-inch, low carb
8
Mexican cheese shredded, reduced fat
1 cup
nonstick cooking spray
as needed

Method

  1. 01Preheat oven to 400°F.
  2. 02Spray a medium saucepan with cooking spray and sauté garlic over medium heat.
  3. 03Add green chiles, chili powder, cumin, and salt. Bring to a boil, then reduce heat to low and simmer 5-10 minutes.10 min
  4. 04Set enchilada sauce aside.
  5. 05In a large skillet, brown ground turkey over medium-high heat and season with salt.
  6. 06Add onion, garlic, black beans, cilantro, green chiles, diced tomatoes, cumin, and chili powder. Mix well and simmer covered on low for 20 minutes.20 min
  7. 07Remove lid and simmer 5-10 minutes to reduce liquid.10 min
  8. 08Spray a 13 by 9-inch baking dish with cooking spray.
  9. 09Spoon 1/2 cup turkey mixture into each tortilla and roll. Place seam side down in baking dish.
  10. 10Top enchiladas with sauce and cheese. Cover with foil and bake 20-25 minutes on middle rack.25 min
