Turkey and Black Bean Enchiladas

Ingredients
- ground turkey extra lean
- 1 lb
- black beans drained
- 1 (15.5 oz) can
- green chiles chopped
- 1 (4.5 oz) can
- diced tomatoes
- 1 (14.5 oz) can
- garlic
- 2 cloves
- onion chopped
- 1/4 cup
- cilantro chopped
- 1/4 cup
- cumin
- 1 1/2 tsp
- chili powder
- 1/8 tsp
- salt
- to taste
- whole wheat flour tortillas 6-inch, low carb
- 8
- Mexican cheese shredded, reduced fat
- 1 cup
- nonstick cooking spray
- as needed
Method
- 01Preheat oven to 400°F.
- 02Spray a medium saucepan with cooking spray and sauté garlic over medium heat.
- 03Add green chiles, chili powder, cumin, and salt. Bring to a boil, then reduce heat to low and simmer 5-10 minutes.10 min
- 04Set enchilada sauce aside.
- 05In a large skillet, brown ground turkey over medium-high heat and season with salt.
- 06Add onion, garlic, black beans, cilantro, green chiles, diced tomatoes, cumin, and chili powder. Mix well and simmer covered on low for 20 minutes.20 min
- 07Remove lid and simmer 5-10 minutes to reduce liquid.10 min
- 08Spray a 13 by 9-inch baking dish with cooking spray.
- 09Spoon 1/2 cup turkey mixture into each tortilla and roll. Place seam side down in baking dish.
- 10Top enchiladas with sauce and cheese. Cover with foil and bake 20-25 minutes on middle rack.25 min
