Ingredients

okra frozen

tomatoes chopped

tomato paste

pomegranate molasses
1 1/2 tsp
Lebanese seven spice
3/4 tsp
cilantro fresh
1 1/8 oz
ground coriander
1 1/2 tsp
water
1 1/2 cup
salt to taste

black pepper to taste

Method

  1. 01Heat olive oil in a large heavy-bottomed pot over medium-high heat. Add onion and garlic, cook until onion is translucent, stirring occasionally.5 min
  2. 02Stir in okra and tomatoes. Cover and cook 7 minutes to release juices.
  3. 03Add tomato paste, pomegranate molasses, Lebanese seven spice, ground coriander, cilantro, water, salt, and pepper. Stir to combine.
  4. 04Reduce heat to medium-low and cook 20-25 minutes, stirring occasionally and checking every 10 minutes to prevent sticking.
  5. 05Taste and adjust salt and pepper. Okra is done when softened. Serve warm.
