Method
- 01Cook black beans from scratch until tender, about 1 to 2 hours, or use canned beans.2 hr
- 02Cook brown rice according to package directions.
- 03Toss warm rice with cilantro, lime juice, and salt to taste.
- 04Combine sliced red onion with rice vinegar and salt. Let sit 30 minutes until pickled.30 min
- 05Blend cilantro, hemp hearts, lime juice, and salt into a pesto.
- 06Divide rice into bowls. Top with black beans, pickled onions, and cilantro pesto.
- 07Finish with pepitas, avocado, cheese, tomatoes, and hot sauce as desired.
