Black Bean Burrito Bowl

Ingredients

black beans cooked
4 1/2 cup
brown rice cooked
6 3/4 cup
cilantro fresh, chopped
to taste
lime juiced
to taste
red onion thinly sliced

rice vinegar
3/4 cup
salt
to taste
hemp hearts
3/8 cup
pepitas toasted
to taste
avocado sliced
to taste
Cotija cheese crumbled
to taste
cherry tomatoes halved
to taste
hot sauce
to taste

Method

  1. 01Cook black beans from scratch until tender, about 1 to 2 hours, or use canned beans.2 hr
  2. 02Cook brown rice according to package directions.
  3. 03Toss warm rice with cilantro, lime juice, and salt to taste.
  4. 04Combine sliced red onion with rice vinegar and salt. Let sit 30 minutes until pickled.30 min
  5. 05Blend cilantro, hemp hearts, lime juice, and salt into a pesto.
  6. 06Divide rice into bowls. Top with black beans, pickled onions, and cilantro pesto.
  7. 07Finish with pepitas, avocado, cheese, tomatoes, and hot sauce as desired.
