Method
- 01Preheat oven to 425°F.
- 02Combine lamb, egg, bread crumbs, garlic, salt, sumac, cumin, red pepper flakes, and smoked paprika in a large bowl. Knead with clean hands until well combined.
- 03Form mixture into small balls, flatten into patties, and arrange 1 inch apart on a large baking sheet. Use two sheets if needed.
- 04Bake 20-25 minutes until well-browned and cooked through.23 min
- 05While kofta bakes, mix equal amounts of sumac, red pepper flakes, and smoked paprika. Set aside. Prepare pita, hummus, and fixings.
- 06Remove kofta from oven and sprinkle spice mixture on top.
- 07Spread hummus on pita, top with arugula and parsley.
- 08Add 3-4 kofta patties per pita and desired fixings: tomatoes, cucumber, onion, olives, jalapenos.
- 09Serve folded or open-faced.
