Ingredients
- cheese tortellini
- 24 oz24 oz
- cherry tomatoesquartered
- 1 1/2 cup
- salamidiced
- 3/4 cup3/4 cup
- marinated artichoke heartsdrained and chopped
- 1 1/2 (12 oz) jar
- English cucumberdiced
- 3/4 medium
- red onionthinly sliced
- 1 1/2 small
- garlicminced
- 3 cloves
- olive oil
- 3 tbsp
- lemonjuiced
- 1 lemon
- dried oregano
- 1 1/2 tsp
- fresh basilchopped
- 3 tbsp
- salt

- black pepperground

Pescatariangluten-free pasta shells or chickpea pasta
Pescatariansmoked tempeh or crispy mushrooms, diced
Method
- 01Cook tortellini in salted water according to package directions until fully cooked but not falling apart. Rinse under cold water, drain in colander.
- 02Add cooled tortellini, tomatoes, salami, artichokes, cucumber, onion, and garlic to a large bowl.
- 03Add olive oil, lemon juice, oregano, and basil. Season with salt and pepper.
- 04Toss to combine and serve.
