Baked Flounder with Garlic and Parmesan

Ingredients

flounder fillets
1 1/4 lb
zucchini halved and sliced into 1/2-inch half moons
2 medium
red onion halved and sliced into 1/2-inch half moons
1 small
kosher salt to taste

black pepper to taste

garlic minced
3 cloves
dried oregano
2 tsp
sweet paprika
1/2 tsp
cumin
1/2 tsp
lemon juiced

extra virgin olive oil

Parmesan cheese grated

Method

  1. 01Preheat oven to 350°F.
  2. 02Whisk garlic, oregano, paprika, cumin, lemon juice, and olive oil in a small bowl.
  3. 03Pat flounder dry and season both sides with salt and pepper. Arrange in a large oven-safe baking dish.
  4. 04Add zucchini and onion to the dish. Season vegetables with salt and pepper. Pour sauce over fish and vegetables.
  5. 05Bake 7 to 10 minutes. Remove from oven and sprinkle Parmesan over fish and vegetables.10 min
