Baked Flounder with Garlic and Parmesan

Ingredients
- flounder fillets
- 1 7/8 lb
- zucchini halved and sliced into 1/2-inch half moons
- 3 medium
- red onion halved and sliced into 1/2-inch half moons
- 1 1/2 small
- kosher salt to taste

- black pepper to taste

- garlic minced
- 5 cloves
- dried oregano
- 3 tsp
- sweet paprika
- 3/4 tsp
- cumin
- 3/4 tsp
- lemon juiced
- 3
- extra virgin olive oil
- 1/2 cup
- Parmesan cheese grated
- 3/4 cup
Method
- 01Preheat oven to 350°F.
- 02Whisk garlic, oregano, paprika, cumin, lemon juice, and olive oil in a small bowl.
- 03Pat flounder dry and season both sides with salt and pepper. Arrange in a large oven-safe baking dish.
- 04Add zucchini and onion to the dish. Season vegetables with salt and pepper. Pour sauce over fish and vegetables.
- 05Bake 7 to 10 minutes. Remove from oven and sprinkle Parmesan over fish and vegetables.10 min
