Ingredients

Lebanese pita bread
8 sheet
falafel
24 balls
tomato thinly sliced
2 5/8 medium
onion thinly sliced
2 5/8 medium
radish thinly sliced
24 small
parsley roughly chopped
8 handful
mint roughly chopped
8 handful
Lebanese pickles strained
8 handful
tahini sauce
to taste

Method

  1. 01Pull apart Lebanese pita bread and layer the two halves on parchment paper.
  2. 02Place 3 falafel balls on bread about 3/4 down toward the end closest to you and squash to break apart.
  3. 03Layer parsley, mint, radish, tomato, and onion over falafel.
  4. 04Add Lebanese pickles in a single layer.
  5. 05Drizzle tahini sauce generously over filling.
  6. 06Fold bottom of pita up over filling, fold right side over, and roll like a burrito. Wrap in parchment and twist ends like a bonbon.
