Falafel Pita Sandwich

Ingredients
- Lebanese pita bread
- 8 sheet
- falafel
- 24 balls
- tomato thinly sliced
- 2 5/8 medium
- onion thinly sliced
- 2 5/8 medium
- radish thinly sliced
- 24 small
- parsley roughly chopped
- 8 handful
- mint roughly chopped
- 8 handful
- Lebanese pickles strained
- 8 handful
- tahini sauce
- to taste
Method
- 01Pull apart Lebanese pita bread and layer the two halves on parchment paper.
- 02Place 3 falafel balls on bread about 3/4 down toward the end closest to you and squash to break apart.
- 03Layer parsley, mint, radish, tomato, and onion over falafel.
- 04Add Lebanese pickles in a single layer.
- 05Drizzle tahini sauce generously over filling.
- 06Fold bottom of pita up over filling, fold right side over, and roll like a burrito. Wrap in parchment and twist ends like a bonbon.
