Lemony Bulgur Chickpea Salad

Ingredients
- bulgur wheat dry
- 3/8 cup
- chickpeas cooked, drained and rinsed
- 3/4 cups
- red onion finely chopped
- 1/8 cup
- parsley chopped
- 0.17 cup
- mint finely chopped
- 1/8 cup
- lemon zest
- 1/2 tbsp
- olive oil
- 1 1/4 tbsp
- lemon juice
- 1 tbsp
- salt fine
- 1/4 tsp
- black pepper freshly ground
- to taste
Method
- 01Cook bulgur according to package instructions. Cool to room temperature.15 min
- 02Combine bulgur, chickpeas, onion, parsley, mint, lemon zest, olive oil, lemon juice, salt, and pepper in a bowl.
- 03Toss and adjust lemon and salt to taste. Serve at room temperature or cold.
