Ingredients

bulgur wheat dry
1 1/8 cup
chickpeas cooked, drained and rinsed
2 1/4 cups
red onion finely chopped
3/8 cup
parsley chopped
1/2 cup
mint finely chopped
3/8 cup
lemon zest
1 1/2 tbsp
olive oil
3 3/4 tbsp
lemon juice
3 tbsp
salt fine
3/4 tsp
black pepper freshly ground
to taste

Method

  1. 01Cook bulgur according to package instructions. Cool to room temperature.15 min
  2. 02Combine bulgur, chickpeas, onion, parsley, mint, lemon zest, olive oil, lemon juice, salt, and pepper in a bowl.
  3. 03Toss and adjust lemon and salt to taste. Serve at room temperature or cold.
