Ingredients

chickpeas drained
1 (15 oz) can
English cucumber quartered and sliced
1/2 large
red bell pepper diced
1/2 large
cherry tomatoes halved
1 cup
red onion thinly sliced
1/2 medium
kalamata olives pitted
1/2 cup
fresh parsley chopped
1/4 cup
feta cheese
2 oz
lemon juiced
1 lemon
red wine vinegar
1 tbsp
Dijon mustard
1 tsp
garlic
2 cloves
dried oregano
1 tsp
extra virgin olive oil
2 1/2 tbsp
salt
to taste
black pepper
to taste

Method

  1. 01Combine chickpeas, cucumber, bell pepper, tomatoes, onion, olives, parsley, and feta in a large bowl.
  2. 02Whisk lemon juice, vinegar, Dijon, garlic, and oregano in a small bowl. Drizzle in olive oil while whisking to emulsify. Season with salt and pepper.
  3. 03Crumble feta over salad, add dressing, and toss to combine.
