Ingredients

eggs large
1 large
avocado ripe, peeled, pitted
0.17 medium
lime juice freshly squeezed
1/4 tbsp
cilantro finely chopped
1/3 tbsp
garlic powder
1/8 tsp
salt
0.04 tsp
black pepper
to taste
smoked paprika
for serving

Method

  1. 01Place eggs in a pot, cover with cool water by 1 inch, and bring to a boil over medium-high heat.5 min
  2. 02Cover pot, remove from heat, and let sit 12 minutes.12 min
  3. 03Transfer eggs to a colander under cool running water or ice bath to stop cooking.
  4. 04Split cooled eggs in half lengthwise and scoop yolks into a mixing bowl.
  5. 05Mash yolks with avocado, lime juice, cilantro, garlic powder, and salt until smooth. Add more lime juice if dry. Season with pepper.
  6. 06Spoon or pipe avocado mixture into egg whites. Garnish with cilantro and smoked paprika.
