Ground Turkey and Rice Taco Skillet

Ingredients
- olive oil
- 2 2/3 tbsp
- onion diced
- 2/3 large
- garlic minced

- ground turkey
- 1 1/3 lb
- long-grain white rice uncooked
- 1 1/3 cup
- diced tomatoes
- 1 1/3 (14.5 oz) can
- chicken broth
- 2 2/3 cups
- taco seasoning
- 5 1/3 tbsp
- salt
- 2/3 tsp
- black pepper
- 1/3 tsp
Method
- 01Heat olive oil in a large skillet over medium-high heat.
- 02Add onion and garlic, saute until tender, stirring as needed.
- 03Add ground turkey, break apart with a spoon, cook until browned.5 min
- 04Stir in rice, tomatoes with juice, broth, taco seasoning, salt, and pepper.
- 05Bring to a boil, then cover and reduce heat to simmer for 20 minutes until rice is cooked through.20 min
- 06Serve warm as an entree or as filling for tacos, burritos, or nachos.
