Ingredients

lukewarm water
1/8 cup
dry yeast
0.83 tsp
avocado ripe

Greek yogurt plain, unsweetened
0.08 cup
white all purpose flour
0.83 cup
salt
1/3 tsp
olive oil
1/3 tbsp
maple syrup
0.08 cup
everything bagel seasoning
to taste

Method

  1. 01Combine lukewarm water and yeast in a small bowl. Stir gently and let sit 10 minutes until foamy.
  2. 02Blend avocado and yogurt in a food processor until completely smooth, or mash with a fork until creamy with no lumps.
  3. 03Whisk flour and salt together in a large bowl.
  4. 04Add avocado-yogurt mixture and yeast water to flour. Mix with a spatula until shaggy, then knead by hand 3-4 minutes until dough forms.
  5. 05Grease bowl with oil, add dough, cover with towel, and let rise at room temperature 60-90 minutes until doubled.1 hr 15 min
  6. 06Divide dough into 6 equal pieces. Shape each into a smooth ball, poke a hole through center, and gently stretch into a ring.
  7. 07Preheat oven to 400°F. Bring a large pot of water to a boil and add maple syrup.
  8. 08Boil bagels 45-60 seconds per side in batches of 2-3. Remove with slotted spoon and place on wire rack.5 min
  9. 09While bagels are damp but cool enough to handle, sprinkle tops and bottoms with everything bagel seasoning.
  10. 10Bake 22-24 minutes until golden brown. Cool on wire rack before slicing.23 min
