Ingredients
- lukewarm water
- 1/3 cup
- dry yeast
- 2 1/2 tsp

- 2 1/2 cup
- salt
- 1 tsp
- olive oil
- 1 tbsp
- maple syrup
- 1/4 cup
- everything bagel seasoning

Method
- 01Combine lukewarm water and yeast in a small bowl. Stir gently and let sit 10 minutes until foamy.
- 02Blend avocado and yogurt in a food processor until completely smooth, or mash with a fork until creamy with no lumps.
- 03Whisk flour and salt together in a large bowl.
- 04Add avocado-yogurt mixture and yeast water to flour. Mix with a spatula until shaggy, then knead by hand 3-4 minutes until dough forms.
- 05Grease bowl with oil, add dough, cover with towel, and let rise at room temperature 60-90 minutes until doubled.1 hr 15 min
- 06Divide dough into 6 equal pieces. Shape each into a smooth ball, poke a hole through center, and gently stretch into a ring.
- 07Preheat oven to 400°F. Bring a large pot of water to a boil and add maple syrup.
- 08Boil bagels 45-60 seconds per side in batches of 2-3. Remove with slotted spoon and place on wire rack.5 min
- 09While bagels are damp but cool enough to handle, sprinkle tops and bottoms with everything bagel seasoning.
- 10Bake 22-24 minutes until golden brown. Cool on wire rack before slicing.23 min
