Method

  1. 01Combine pesto, balsamic vinegar, honey, and lemon juice in a jar. Season with chili flakes, salt, and pepper.
  2. 02Toss chicken with half the vinaigrette and 1 tbsp olive oil in one bowl. Toss tomatoes with 1 tbsp olive oil, salt, and pepper in another.
  3. 03Heat grill, grill pan, or skillet to medium-high. Thread chicken and tomatoes alternately onto skewers.
  4. 04Grill skewers until lightly charred and cooked through, turning occasionally, about 10 to 12 minutes.12 min
  5. 05Toss mozzarella balls with a few tablespoons of vinaigrette. Arrange mozzarella and burrata on a serving plate.
  6. 06Place skewers over cheese. Spoon remaining vinaigrette over everything. Drizzle with olive oil and balsamic vinegar. Top with basil, salt, pepper, and chili flakes.
