- bananas overripe, mashed

- cottage cheese blended smooth
- 2/3 cup
- eggs

- maple syrup

- coconut oil melted and cooled

Method
- 01Preheat oven to 375°F and line a muffin pan with liners.
- 02Blend cottage cheese until completely smooth.
- 03Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- 04Mash bananas, then add blended cottage cheese, eggs, maple syrup, coconut oil, and vanilla. Mix until combined.
- 05Add wet ingredients to dry and stir just until incorporated. Do not overmix.
- 06Divide batter evenly among muffin liners, filling each about 3/4 full.
