Black Bean and Corn Salsa

Ingredients

black beans drained and rinsed
1 1/2 (15 oz) can
corn thawed
1 1/2 cup
red bell pepper diced
1 1/2 small
red onion diced
3/8 medium
jalapeño pepper seeded and minced

lime zested and juiced
3
fresh cilantro chopped
3/8 cup
salt to taste
3/4 tsp
black pepper to taste
3/8 tsp
ground cumin
3/8 tsp
avocado diced
optional

Method

  1. 01Combine black beans, corn, bell pepper, onion, jalapeño, cilantro, lime zest, lime juice, salt, pepper, and cumin in a medium bowl. Stir gently until combined.
  2. 02Cover and refrigerate in an airtight container up to 5 days.
  3. 03Before serving, add diced avocado if using and gently toss to combine. Serve chilled.
