Black Bean and Corn Salsa

Ingredients
- black beans drained and rinsed
- 1 (15 oz) can
- corn thawed
- 1 cup
- red bell pepper diced
- 1 small
- red onion diced
- 1/4 medium
- jalapeño pepper seeded and minced
- 1
- lime zested and juiced
- 2
- fresh cilantro chopped
- 1/4 cup
- salt to taste
- 1/2 tsp
- black pepper to taste
- 1/4 tsp
- ground cumin
- 1/4 tsp
- avocado diced
- optional
Method
- 01Combine black beans, corn, bell pepper, onion, jalapeño, cilantro, lime zest, lime juice, salt, pepper, and cumin in a medium bowl. Stir gently until combined.
- 02Cover and refrigerate in an airtight container up to 5 days.
- 03Before serving, add diced avocado if using and gently toss to combine. Serve chilled.
