Baked Pesto Chicken

Ingredients

chicken breasts boneless, skinless, trimmed
6 breasts
basil pesto
3/4 cup
mozzarella cheese grated
3/4 cup
salt
to taste
black pepper fresh ground
to taste

Method

  1. 01Preheat oven to 375°F.
  2. 02Trim chicken breasts and cut each lengthwise into 2 or 3 strips.
  3. 03Spray a 9 by 12 inch baking dish with non-stick spray, then spread 1/4 cup pesto over the bottom.
  4. 04Lay chicken strips over pesto, then spread remaining 1/4 cup pesto over chicken.
  5. 05Season chicken with salt and pepper.
  6. 06Cover dish with foil and bake 25 to 30 minutes, until chicken is barely cooked through.28 min
  7. 07Remove foil, sprinkle mozzarella over chicken, and bake 5 minutes more until cheese melts.5 min
