Baked Pesto Chicken

Ingredients
- chicken breasts boneless, skinless, trimmed
- 8 breasts
- basil pesto
- 1 cup
- mozzarella cheese grated
- 1 cup
- salt
- to taste
- black pepper fresh ground
- to taste
Method
- 01Preheat oven to 375°F.
- 02Trim chicken breasts and cut each lengthwise into 2 or 3 strips.
- 03Spray a 9 by 12 inch baking dish with non-stick spray, then spread 1/4 cup pesto over the bottom.
- 04Lay chicken strips over pesto, then spread remaining 1/4 cup pesto over chicken.
- 05Season chicken with salt and pepper.
- 06Cover dish with foil and bake 25 to 30 minutes, until chicken is barely cooked through.28 min
- 07Remove foil, sprinkle mozzarella over chicken, and bake 5 minutes more until cheese melts.5 min
