Grilled Pear Halloumi Salad

Ingredients
- Bartlett pears quartered, seeded
- 3 count
- halloumi sliced thick
- 6 oz
- olive oil
- for grilling
- arugula
- 4 1/2 handfuls
- walnuts chopped
- 4 1/2 tbsp
- shallot minced
- 3 tbsp
- champagne vinegar
- 3 tbsp
- honey
- 1 1/2 tbsp
- lemon juice
- 1 1/2 tbsp
- lemon zest
- 3/4 tsp
- olive oil
- 3/8 cup
Method
- 01Heat grill to medium-high.
- 02Rub pears and halloumi with olive oil, place on grill, and cook until charred on both sides.10 min
- 03Chop halloumi into bite-sized pieces.
- 04Toast walnuts in a dry skillet over medium heat, shaking often, until fragrant.
- 05Cool walnuts and chop.
- 06Whisk shallot, champagne vinegar, honey, lemon juice, lemon zest, and 1/4 cup olive oil.
- 07Toss arugula, pears, halloumi, and walnuts with dressing and serve.
