Grilled Pear Halloumi Salad

Ingredients

Bartlett pears quartered, seeded
4 count
halloumi sliced thick
8 oz
olive oil
for grilling
arugula
6 handfuls
walnuts chopped
6 tbsp
shallot minced
4 tbsp
champagne vinegar
4 tbsp
honey
2 tbsp
lemon juice
2 tbsp
lemon zest
1 tsp
olive oil
1/2 cup

Method

  1. 01Heat grill to medium-high.
  2. 02Rub pears and halloumi with olive oil, place on grill, and cook until charred on both sides.10 min
  3. 03Chop halloumi into bite-sized pieces.
  4. 04Toast walnuts in a dry skillet over medium heat, shaking often, until fragrant.
  5. 05Cool walnuts and chop.
  6. 06Whisk shallot, champagne vinegar, honey, lemon juice, lemon zest, and 1/4 cup olive oil.
  7. 07Toss arugula, pears, halloumi, and walnuts with dressing and serve.
