Ingredients

garlic peeled
12 cloves
extra virgin olive oil
1/3 cup
lemon juice fresh
2 tbsp
coriander ground
1 tsp
cumin ground
3/4 tsp
sweet paprika
3/4 tsp
kosher salt

black pepper freshly ground
1/2 tsp
swordfish steaks
4 steaks
crushed red pepper
to taste

Method

  1. 01Blend garlic, lemon juice, olive oil, coriander, cumin, paprika, salt, and pepper in a food processor until smooth, about 3 minutes.
  2. 02Pat swordfish steaks dry, place in a dish, coat with marinade on both sides, and set aside for 15 minutes while heating the grill.
  3. 03Preheat gas grill to high and oil the grates.
  4. 04Grill swordfish 5 to 6 minutes on the first side until well-browned.6 min
  5. 05Flip and grill 3 minutes on the second side until fish flakes easily with a fork.
  6. 06Finish with a splash of fresh lemon juice and crushed red pepper to taste.
