Grilled Swordfish

Ingredients
- garlic peeled
- 12 cloves
- extra virgin olive oil
- 1/3 cup
- lemon juice fresh
- 2 tbsp
- coriander ground
- 1 tsp
- cumin ground
- 3/4 tsp
- sweet paprika
- 3/4 tsp
- kosher salt
- 3/4 tsp
- black pepper freshly ground
- 1/2 tsp
- swordfish steaks
- 4 steaks
- crushed red pepper
- to taste
- lemon for serving

Method
- 01Blend garlic, lemon juice, olive oil, coriander, cumin, paprika, salt, and pepper in a food processor until smooth, about 3 minutes.
- 02Pat swordfish steaks dry, place in a dish, coat with marinade on both sides, and set aside for 15 minutes while heating the grill.
- 03Preheat gas grill to high and oil the grates.
- 04Grill swordfish 5 to 6 minutes on the first side until well-browned.6 min
- 05Flip and grill 3 minutes on the second side until fish flakes easily with a fork.
- 06Finish with a splash of fresh lemon juice and crushed red pepper to taste.
