Sha Cha Beef Stir-fry

Ingredients
- beef thinly sliced against the grain
- 1/2 lb
- soy sauce
- 5/8 tbsp
- cornstarch
- 1 tsp
- vegetable oil
- 2 1/2 tbsp
- ginger minced
- 3/4 tbsp
- garlic thinly sliced
- 2 cloves
- sha cha sauce
- 1 tbsp
- sugar
- 1 tsp
- scallions cut on an angle into 2-inch lengths

Method
- 01Toss beef with 1 tsp soy sauce, cornstarch, and 1 tbsp oil.
- 02Heat wok over high heat until smoking. Add 2 tbsp oil and sear beef until just opaque. Remove and set aside.
- 03Reduce heat to medium. Add remaining 2 tbsp oil, then ginger. Cook 1 minute.
- 04Add garlic, sha cha sauce, and sugar. Fry 2 minutes.
- 05Return beef and scallions to wok with remaining 1/4 tbsp soy sauce. Increase heat to high and stir-fry 1 minute until scallions wilt.
