Ingredients
- salmon fillets skin-on, 1-inch thick
- 8 fillets
- grapeseed oil
- 4 tbsp
- kosher salt
- 4 tsp
- black pepper freshly ground
- 4 tsp
- lemon cut into wedges
- 2 lemon
Method
- 01Preheat grill to 450°F-500°F over direct high heat with lid closed, about 10 minutes.10 min
- 02Coat flesh side of salmon fillets generously with oil and season evenly with salt and pepper.
- 03Grill salmon skin side down with lid closed for 6-8 minutes until skin releases easily from grates.7 min
- 04Flip salmon and cook with lid closed for 2-4 minutes until internal temperature reaches 130°F for medium rare.
- 05Transfer to platter and rest 1-2 minutes. Slide skin from fillets and serve with lemon wedges.2 min
