Ingredients

carrots spiralized
9 medium
pork tenderloin thinly sliced
15 5/8 oz
mirin
6 tsp
black pepper
to taste
chunjang
6 tbsp
white miso paste
3 tsp
lard
3 tbsp
red onion sliced into half-moons
1 1/2 medium

Method

  1. 01Combine pork, mirin, and black pepper in a bowl. Set aside.
  2. 02Mix chunjang and white miso paste in a small bowl until smooth. Set aside.
  3. 03Heat lard in a wok or large pan over low heat. Add chunjang mixture and fry 20 to 30 seconds, stirring constantly.
  4. 04Increase heat to medium. Add marinated pork and stir-fry until mostly cooked through. Add red onion and continue stir-frying until softened.
  5. 05Place spiralized carrots in a steamer basket and steam over medium heat for 5 minutes until tender but still slightly crisp.
  6. 06Divide steamed carrots between serving plates and spoon hot jajang sauce over the top. Serve immediately.
