Method
- 01Heat oven to 325°F.
- 02In a food processor, combine croutons, black pepper, cayenne, chilli powder, and thyme. Pulse until fine texture.
- 03Transfer crouton mixture to a large bowl.
- 04In the food processor, combine onion, carrot, garlic, and red bell pepper. Pulse until finely chopped but not pureed.
- 05Add vegetable mixture to the crouton mixture.
- 06Combine ground chuck, ground sirloin, and bread crumb mixture. Season with kosher salt.
- 07Add egg and combine thoroughly without squeezing the meat.
- 08Pack mixture into a 10-inch loaf pan to mold the shape of the meatloaf.
- 09Turn meatloaf out of pan onto center of a parchment paper-lined baking sheet.
- 10Insert a temperature probe at a 45 degree angle into the top of the meatloaf, avoiding the bottom of the tray. Set probe for 155°F.
- 11Combine ketchup, cumin, Worcestershire sauce, hot pepper sauce, and honey for the glaze.
- 12Brush glaze onto meatloaf after it has been cooking for about 10 minutes.10 min
- 13Bake until internal temperature reaches 155°F.
