Seitan Stir Fry

Ingredients

seitan cut into bite-sized pieces
4 oz
avocado oil
1 tbsp
onion thinly sliced
1/2 small
red bell pepper thinly sliced

shiitake mushrooms sliced
3
carrots shredded
3/8 cup
garlic minced
2 cloves
vegetable broth
1/8 cup
soy sauce
1 1/2 tbsp
sesame oil
1 tbsp
rice vinegar
1 tbsp
maple syrup
1 tbsp
cornstarch
3/4 tsp
salt
to taste
pepper
to taste
green onion chopped
for garnish

Method

  1. 01Whisk vegetable broth, soy sauce, sesame oil, rice vinegar, maple syrup, and cornstarch for the sauce. Set aside.
  2. 02Heat 1 tbsp avocado oil in a large skillet over medium heat. Add seitan and cook until golden brown, 4-5 minutes. Transfer to a plate.
  3. 03Add 1 tbsp avocado oil to the skillet. Add onion, bell pepper, mushrooms, and a pinch of salt. Sauté until soft, about 5 minutes. Add water if needed to prevent sticking.5 min
  4. 04Add carrots and garlic. Sauté 2 minutes.
  5. 05Return seitan to the skillet. Pour sauce over everything and stir until thickened and coated, about 1-2 minutes. Season with salt and pepper.
  6. 06Serve over rice. Garnish with green onion.
