  1. 01Crack egg into a ramekin or small dish.
  2. 02Heat nonstick skillet over medium-high heat. Add olive oil, reduce heat to medium, tilt pan to spread oil, and watch for shimmer.
  3. 03Slide egg into heated oil. Season with salt and za'atar.
  4. 04Cook 2 to 3 minutes over medium heat, spooning olive oil over whites, until whites set and edges crisp and yolk reaches desired doneness. Cover briefly if needed for firmer yolk.
