Flourless Chocolate Torte

Ingredients

unsalted butter
1 1/2 cup
brown sugar
3/4 cup
strong coffee
1/2 cup
dark chocolate finely chopped, 65% or higher

Method

  1. 01Preheat oven to 350°F. Butter parchment and line the bottom of a 10-inch springform pan.
  2. 02In a sauce pan, melt butter with brown sugar and coffee until fully melted and warm. Remove from heat and add chocolate chips without stirring. Set aside.
  3. 03In a bowl, whip eggs, vanilla, and salt until frothy. Set aside.
  4. 04Stir chocolate mixture until all chips are melted and everything is emulsified. Scrape a third of the chocolate into the eggs and mix in, add half the remaining chocolate, blend in, then add the rest until fully incorporated. Pour into prepared pan.
  5. 05Place in the middle of the oven on a tray. Bake 35-40 minutes until slightly puffed at edges and center is firm, not jiggly.38 min
  6. 06Cool on a rack. Run a knife around the edge and let sit 30 minutes before removing the ring. Refrigerate 2 hours or up to 2 days.30 min
  7. 07Sprinkle with powdered sugar and cocoa powder if desired. Serve with fresh berries and whipped cream.
