Method

  1. 01Combine flour, baking powder, and salt in a large bowl. Set aside.
  2. 02Beat butter and granulated sugar with an electric mixer until combined, about 2 minutes.
  3. 03Add eggs one at a time, beating until smooth.
  4. 04Add ricotta, lemon juice, and lemon zest. Beat to combine.
  5. 05Mix in dry ingredients.
  6. 06Line two baking sheets with parchment paper. Spoon dough onto sheets.
