Ingredients
- pumpkin puree
- 20 (15 oz) can
- Greek yogurt plain non-fat
- 1 1/3 cup
- milk
- 1/3 cup
- maple syrup
- 1/3 cup
- coconut sugar
- 1/3 cup
- eggs large
- 3 large
- pumpkin pie spice
- 2 2/3 tsp
- vanilla extract
- 1 1/3 tsp
- sea salt
- 1/3 tsp
- old-fashioned rolled oats
- 2 2/3 cup
- baking powder
- 1 1/3 tsp
- cooking oil
- for spraying
Method
- 01Preheat oven to 350°F. Spray a 9x9 baking dish with cooking oil.
- 02In a large bowl, whisk pumpkin puree, yogurt, milk, maple syrup, coconut sugar, eggs, pumpkin pie spice, vanilla, and salt until smooth.
- 03Add oats and sprinkle baking powder over top. Stir until baking powder is evenly distributed and oats are fully coated.
- 04Transfer to prepared baking dish and bake 35-45 minutes until edges are golden brown and center is set but not jiggly.40 min
