pumpkin puree
3 1/3 (15 oz) can
Greek yogurt plain non-fat
1/4 cup
milk
0.06 cup
maple syrup
0.06 cup
coconut sugar
0.06 cup
eggs large
1 large
pumpkin pie spice
0.44 tsp
vanilla extract
1/4 tsp
sea salt
0.06 tsp
old-fashioned rolled oats
0.44 cup
baking powder
1/4 tsp
cooking oil
for spraying

Method

  1. 01Preheat oven to 350°F. Spray a 9x9 baking dish with cooking oil.
  2. 02In a large bowl, whisk pumpkin puree, yogurt, milk, maple syrup, coconut sugar, eggs, pumpkin pie spice, vanilla, and salt until smooth.
  3. 03Add oats and sprinkle baking powder over top. Stir until baking powder is evenly distributed and oats are fully coated.
  4. 04Transfer to prepared baking dish and bake 35-45 minutes until edges are golden brown and center is set but not jiggly.40 min
