Ingredients

chicken thighs boneless, skinless
6 thighs
cilantro chopped
1/4 cup
lime juice fresh
1/4 cup
lime zest
1 tbsp
olive oil
2 tbsp
garlic minced
3 cloves
chili powder
1 tsp
cumin
1 tsp
kosher salt
1 tsp
black pepper
1 tsp
red pepper flakes
pinch
corn fresh or frozen
1 cup
red bell pepper sliced
1 pepper
black beans drained
1 can
cheddar cheese shredded
1 cup
avocado sliced
to taste
sour cream
to taste
salsa
to taste
cilantro lime rice cooked
2 cups
romaine lettuce chopped
to taste

Method

  1. 01Whisk lime juice, lime zest, cilantro, olive oil, garlic, chili powder, cumin, salt, pepper, and red pepper flakes in a large bowl.
  2. 02Add chicken and coat with marinade. Cover and chill for 30 minutes or up to overnight.30 min
  3. 03Heat grill or heavy pan to medium-high heat and lightly oil it. Add chicken and cook 5-7 minutes per side until cooked through.15 min
  4. 04Remove chicken from heat, cover with foil, and rest for 5 minutes. Slice before serving.5 min
  5. 05In the same pan, add sliced bell pepper and sauté for 3-4 minutes until tender.
  6. 06Add corn and sauté for 3-4 minutes until warmed through.
  7. 07To each serving bowl, add 1/2 cup cooked rice, romaine lettuce, sliced chicken, bell pepper, corn, black beans, cheese, avocado, sour cream, and salsa.
